豇豆

干辣椒

猪腿肉

肉沫酸豆角的做法

  1. 豇豆去头尾,洗净。
    依照储存瓶大小将豇豆切段。



  1. 煮沸一锅水。



  1. 下入豇豆焯烫10秒,至变成翠绿色。



  1. 捞出过凉水。



  1. 无油的保鲜盒中加入1勺盐。



  1. 放入豇豆,填满水,末过豇豆。



  1. 阴凉处存放三天。
    开盖,变成黄绿色。



  1. 豇豆捞出洗净,切成小丁。



  1. 腿肉剁成馅。



  1. 热锅加入底油,加入花椒八角炸香。



  1. 加入葱姜蒜和干辣椒爆香。



  1. 加入肉末炒至变色,淋入料酒。



  1. 加入酸豆角一同翻炒。



  1. 淋入生抽,老抽,翻炒均匀后加入少量水,炖5分钟。



  1. 收干汤汁,调入适量盐。

小贴士

1. 装豇豆的盒子要保证无油,不然容易坏。
2. 如果想要酸一点,泡豇豆的水可以温度高些,浸泡的时间长一点。
3. 开盒后,豇豆还是脆的。如果豇豆软了,一捏就碎了,那就是坏了,不能吃了哦。
