肉沫酸豆角的做法
- 豇豆去头尾,洗净。
依照储存瓶大小将豇豆切段。
- 煮沸一锅水。
- 下入豇豆焯烫10秒,至变成翠绿色。
- 捞出过凉水。
- 无油的保鲜盒中加入1勺盐。
- 放入豇豆,填满水,末过豇豆。
- 阴凉处存放三天。
开盖,变成黄绿色。
- 豇豆捞出洗净,切成小丁。
- 腿肉剁成馅。
- 热锅加入底油,加入花椒八角炸香。
- 加入葱姜蒜和干辣椒爆香。
- 加入肉末炒至变色,淋入料酒。
- 加入酸豆角一同翻炒。
- 淋入生抽,老抽,翻炒均匀后加入少量水,炖5分钟。
- 收干汤汁,调入适量盐。

1. 装豇豆的盒子要保证无油,不然容易坏。
2. 如果想要酸一点,泡豇豆的水可以温度高些,浸泡的时间长一点。
