我们徽州的特色,也是我的招牌菜之一。这道菜的关键是肉和鱼的比例,2:1或3:1,因为鱼是咸的,如果肉少了,即便你加了冰糖、没放一点盐、咸鱼也泡过水了,最后也会很咸。

家常菜—咸鱼烧肉的做法

  1. 咸鱼洗干净(鱼肚子里的黑色膜要洗掉)用温水泡半小时以上,改刀小块



  1. 五花肉切块下油锅炒干水分,煎出香味



  1. 加冰糖翻炒



  1. 加适量老抽翻炒



  1. 再加适量料酒翻炒



  1. 加水盖过肉,烧开后改小火烧(你可以该干嘛干嘛,就是别忘了灶上还在烧肉)

  1. 准备三片姜(因为我不吃姜所以加的少,喜欢的可以多加几片。但是咸鱼烧肉一定要加,否则会腥)



  1. 肉烧到五分熟,加入泡好咸鱼和姜片,盖锅继续小火烧,直至肉烧熟,这个过程中除了加了老抽,不能加盐,不能加盐,不能加盐(重要的事情说三遍)



  1. 最后成品,肉很香,咸鱼恰到好处,很下饭
