辣鸡爪的做法

  1. 鸡爪展开,去指甲



  1. 放生姜,料酒(或者白酒)焯水



  1. 煮开后煮三分钟,捞出洗净浮沫



  1. 重新加水



  1. 加入桂皮,八角,香叶,干辣椒,姜片(去腥增香)



  1. 加入生抽,老抽,冰糖,卤一下



  1. 煮20分钟,或者高压锅压3-4分钟



  1. 捞出鸡爪



  1. 保留原汤汁



  1. 油爆干辣椒,大蒜,加一点辣椒面
