辣鸡爪的做法
- 鸡爪展开,去指甲
- 放生姜,料酒(或者白酒)焯水
- 煮开后煮三分钟,捞出洗净浮沫
- 重新加水
- 加入桂皮,八角,香叶,干辣椒,姜片(去腥增香)
- 加入生抽,老抽,冰糖,卤一下
- 煮20分钟,或者高压锅压3-4分钟
- 捞出鸡爪
- 保留原汤汁
- 油爆干辣椒,大蒜,加一点辣椒面
