Born in Madrid, Spain, Javier Estévez has spent over thirty years honing his culinary skills. Known for his creative approach to cuts like lamb neck, pork cheek, sweetbread beef, duck heart, and pig trotters, he combines classic techniques with bold imagination to turn everyday ingredients into extraordinary dishes. Each plate is a celebration of unique flavors and textures, challenging the way these ingredients are traditionally viewed. With every dish, Chef Estévez offers a dining experience that is both innovative and unforgettable.



本次客座活动,侍酒师精选六款来自西班牙以及中国的佳酿,从清新至深邃缓缓递进,呼应料理的狂想节奏。来自西班牙下海湾地区的巴兰特酒庄阿尔巴利诺白葡萄酒拥有浓郁的油桃和黄梅的香气,活泼而充满表现力,能够冲破绵密脑花的油脂感与脆壳的层次,将狂想料理化为优雅协奏。来自里奥哈的莫瑞塔酒庄卡佩兰白葡萄酒果香细腻,口感流畅,松子、月桂叶和榛子皮的香气冲散牛舌沙拉配鸭肝酱和杏仁的脂感,将陆地与天空的私语淬炼成风土与匠心的对话。同样来自莫瑞塔酒庄的珍藏红葡萄酒2019搭配猪颊肉玉米薄饼,地中海香草和淡淡的陈年气息为粗犷的街头小吃染上优雅氛围。莫瑞塔酒庄格兰珍藏红葡萄酒2016在美国橡木桶中陈酿26个月,带有成熟的黑色水果和落叶的香气,深邃气息轻抚鸭心,玉米笋,树莓,带来深沉细腻口感。而莫瑞塔酒庄伊格庄园格兰珍藏红酒2012则拥有浓郁而复杂的黑樱桃和成熟李子的香气,搭配猪蹄,洋蓟,鳌虾,细腻的单宁让浓郁的肉汁和香气在口中化为更为深邃的香气。最后的汉尼拔甜品搭配来自中国宁夏陆壹酒庄甜型白葡萄酒纯净又飘逸,带有淡淡的菠萝芒果香气,在清甜氛围中结束这充满戏剧感和张力的创想之宴。

For this exclusive culinary experience, the sommelier has handpicked six exceptional wines from Spain and China, carefully selected to progress from fresh and light to rich and deep, perfectly complementing the bold, imaginative dishes. The Albarino from Pazo Barrantes in Spain’s Rias Baixas region delights with vibrant aromas of ripe peach and yellow plum. Its vibrant and refreshing character beautifully balances the rich, creamy textures of the dishes, transforming each bite into an elegant culinary symphony. From the heart of Rioja, the Capellania white wine from Marqués De Murrieta offers delicate fruit notes, with hints of pine nuts, bay leaves, and hazelnut skins. Paired with beef tongue salad and duck liver pate, it elevates this dish, creating a perfect harmony between land and sky. The Reserva, Marques De Murrieta 2019, paired with pork cheek taco, adds a touch of Mediterranean herbs and subtle aging, giving a refined elegance to this rustic dish. The Gran Reserva, Marques De Murrieta 2016, aged for 26 months in American oak barrels, brings deep aromas of ripe black fruits and fallen leaves. Its rich, smooth texture enhances the flavors of duck heart, baby corn, and raspberries, creating a complex and refined tasting experience. The Castillo Ygay Gran Reserva Especial, Marques de Murrieta 2012 offers intense aromas of black cherries and ripe plums. Paired with pig trotters, artichokes, and crayfish, the refined tannins elevate the rich, savory flavors, making each bite even more remarkable. Finally, the “Hannibal Dessert” is paired with a sweet white wine from Domaine du 1er Juin in Ningxia, China. With its crisp, refreshing body and delicate pineapple-mango notes, it’s the perfect conclusion to this dramatic and unforgettable culinary journey.
