云朵蛋糕的做法

  1. 无油无水的容器里打入六个鸡蛋。



  1. 我是用手取出的蛋黄,这样很方便。注意别弄破蛋黄就行。



  1. 加入20克白糖用打蛋器将蛋黄打发发白。



  1. 五十克玉米油和五十克牛奶搅拌乳化倒入蛋黄里搅拌均匀。



  1. 再加入九十克低筋面粉。



  1. 搅匀放一旁备用。



  1. 这时候来处理蛋清,六个蛋清里放入15克玉米淀粉和60克白糖。



  1. 用打蛋器打发。



  1. 打到明显有阻力。



  1. 硬性发泡,提前打蛋器有小弯钩的状态。



  1. 取三分之一蛋清放入蛋黄里。



  1. 翻拌均匀。



  1. 再把搅好蛋黄全部倒入蛋白里。



  1. 一定要翻拌,不要打圈,避免消泡。



  1. 搅拌好是细腻的状态。



  1. 倒入两个六寸模具。



  1. 用竹签搅拌出里面的大气泡。



  1. 在稍微摔两下震出里面多余的气泡。

  1. 烤箱提前预热,140度烤45分钟。
