云朵蛋糕的做法
- 无油无水的容器里打入六个鸡蛋。
- 我是用手取出的蛋黄,这样很方便。注意别弄破蛋黄就行。
- 加入20克白糖用打蛋器将蛋黄打发发白。
- 五十克玉米油和五十克牛奶搅拌乳化倒入蛋黄里搅拌均匀。
- 再加入九十克低筋面粉。
- 搅匀放一旁备用。
- 这时候来处理蛋清,六个蛋清里放入15克玉米淀粉和60克白糖。
- 用打蛋器打发。
- 打到明显有阻力。
- 硬性发泡,提前打蛋器有小弯钩的状态。
- 取三分之一蛋清放入蛋黄里。
- 翻拌均匀。
- 再把搅好蛋黄全部倒入蛋白里。
- 一定要翻拌,不要打圈,避免消泡。
- 搅拌好是细腻的状态。
- 倒入两个六寸模具。
- 用竹签搅拌出里面的大气泡。
- 在稍微摔两下震出里面多余的气泡。
