南瓜马蹄糕的做法
- 把材料分配好备用
- 洲星这个牌子的马蹄粉挺不错的、纯正杂质又少一直都喜欢用它
- 南瓜去皮切成片大火蒸10分钟或者是用微波炉叮3-5分钟。
- 南瓜蒸好后加入700克清水用破壁机或料理机打成汁备用。(用破壁机打出来的汁会比较细腻柔滑不用过滤都可以直接使用)
- 把250克马蹄粉分成两份150克、100克,把350克南瓜汁倒入装有150克马蹄粉的容器里搅拌均匀。
- 过滤去杂质后备用
- 把另外350克南瓜汁倒入小奶锅中加入160克白糖开中小火一边煮一边搅拌直至白糖溶化即可。
- 不用关火,在刚才调好的马蹄粉浆里舀两勺倒入锅里快速搅拌均匀煮至稀糊状离灶,再将调好的马蹄粉浆和煮好的马蹄粉熟浆一起混合均匀备用。
- 这就是混合好的熟浆,煮生熟浆是使成品的口感更加Q弹、所以这一步是不能偷懒的哦。
- 南瓜熟浆调好后,再来把小白浆调好就可以了、把400克椰浆、200克牛奶、20克白糖倒入装有100克马蹄粉的容器里搅拌至沙糖溶化。
- 搅拌均匀后过滤去杂质刮下粉末颗粒即可。
- 熟浆和小白浆都混合完成了,接下来就是一层一层的蒸了。
- 锅里加入足够的清水放上蒸盘大火把水烧开煮沸,在蒸盘上刷入一层薄薄的玉米油这样更容易完美的脱模。
- 舀三勺熟浆到蒸盘里盖上锅盖大火蒸3-5分钟至表皮透明凝固即可(如图)
- 再舀两勺小白浆到蒸盘里铺平盖上锅盖大火蒸3-5分钟至表皮透白凝固即可(如图)

选马蹄粉一定要选纯正的杂质少的不要随便乱买,椰浆呢一定不能用椰汁代替必须是椰浆哈、用椰汁蒸出来的糕风味不止差一丢丢哦。
