腌鱼料:
蚝油

黄鱼面的做法
- 小黄鱼,去头去内脏洗净。
沿鱼骨片开两边的鱼肉。用腌鱼料腌制半小时。
- 鱼骨保留待用。
- 姜丝爆香。
- 下鱼骨煎香。
- 加入开水!开水!
汤汁瞬间奶白,而且不会腥。
- 转入汤锅,大火煮10分钟。
- 用漏勺捞出鱼骨。
- 鱼汤中加入白萝卜条,继续大火煮。
- 将腌制好的鱼肉和黑虎虾,下入鱼汤中汆烫熟,大概就1、2分钟,不要煮太久,鱼肉会散。
- 另起一锅,煮面。
- 顺便烫点青菜。
