紫薯奶酪山药糕的做法

  1. 先准备馅料,提前一天准备也可以。紫薯去皮切块放在蒸锅里蒸熟,到筷子能轻松插进去即可。



  1. 放入破壁机,加入牛奶后打成泥状,牛奶添加量可根据具体破壁机动力情况增减。



  1. 将紫薯泥放入不沾锅,加入奶粉、细砂糖、黄油,小火开始翻炒。到能轻松抱团叠起来的状态出锅晾凉。



  1. 奶油奶酪软化后加入糖粉,用蛋抽搅打至顺滑,如果有颗粒可以隔热水搅打。冷却后放入裱花袋。



  1. 将紫薯馅分成10份,每份22克左右,搓圆后开窝,用裱花袋挤入一点奶油奶酪后收口搓圆,全部处理完后盖上保鲜膜冷藏备用。(剩余的紫薯馅可以密封后冷冻保存)

  1. 制作饼皮。铁棍山药去皮后切块,盖上保鲜膜放入蒸锅中大火蒸30分钟左右,到筷子可以轻松戳入。



  1. 蒸山药的同时,将糯米粉放入不沾锅中,小火炒制到微微发黄后关火备用,可以多炒一点备用。



  1. 山药出锅后,趁热大致压成泥,放入细砂糖拌匀。



  1. 将山药泥放入搅拌机或者破壁机中搅打均匀。



  1. 将糯米粉和山药泥混合拌匀,先用硅胶铲翻拌,再戴上不沾手套揉均匀。(山药搅打成泥后含水量会有所不同,糯米粉可以看情况增减,以面粉能成团为准)



  1. 将面团平均分成3份,其中2份分别加入抹茶粉和紫薯粉揉匀。



  1. 将三种颜色的面粉分别分成7-8克一份,各取一个颜色交错揉成团,然后压扁摊开后包入馅料。







  1. 所有面团都处理完后,表面再裹一点炒熟的糯米粉,放入模具压出花型即可。



  1. 做完的山药糕密封打包,尽量在3天内食用完毕。
