碱水面包|圣诞碱水棍的做法
- 将全部材料按照先液体后粉类的顺序倒进厨师机
- 搅打成团
- 打成8成筋度的面团
- 面温控制在26度内
- 打好的面团均分6份揉圆松弛
- 擀成长方形
- 在一头铺上蜜红豆
- 也可以是栗子馅,或者什么馅都不加
- 从上至下卷起来,接口处捏紧
- 再从中间向两头搓长,长度大概20cm

- 搓好后拗成“J”造型
- 摆在烤盘里,送入冰箱冷冻40分钟
- 冷冻好后的面包棍过碱水30秒捞出沥出多余的碱水
- 摆到垫有油布的烤盘中,用刀片割出刀口
- 送入烤箱上管230度,下管180度烤15分钟
- 刀口割深点,不然烤的时候会粘连在一起
(不然就会像我这样割了仿佛又没割,很尴尬)
- 烤好出炉放烤网上晾凉
