莴笋土鸡煲的做法

  1. 做法:
    准备以上食材



  1. 土鸡切成块洗净,倒入锅中,加几片姜和一大勺黄酒,加入没过鸡肉的冷水进行焯水



  1. 水开后再继续煮三分钟,捞出后用热水冲洗干净。



  1. 把鸡肉倒入锅中煎,不要额外加油了,煎到鸡肉表皮焦黄后加入香料和冰糖炒香



  1. 再加入豆瓣酱和柱侯酱炒香,这里没有额外加油,有点干巴巴,炒酱料时要注意小火别炒糊了。



  1. 翻炒均匀



  1. 把炒好的鸡肉倒入压力锅中

  1. 加入开水,盖好盖子后选浓香炖肉档炖30—35分钟(时间跟鸡肉块的大小有关)



  1. 炖好泄压后加入切滚刀块的莴笋,开着盖子用火锅档把莴笋煮熟



  1. 煮的时候用筷子把莴笋拨一拨埋入汤汁中,最后淋一些水淀粉收汁即可。



  1. 很多时候炖两斤肉我都会留一些第二顿煮面或者煮菜汤,这个鸡肉一顿都吃光了,没有剩下的~
