  1. 【饺子皮】
    面粉加谷朊粉拌匀,加清水和成一个粗糙面团。



  1. 装袋或装盒,抽真空,静置半小时后面团成型。



  1. 搓成长条,切分成小剂子,擀圆成饺子皮,包饺子即可。



  1. 【猪肉白菜馅】
    卷心菜,白菜,葱头切细丁,姜擦成泥。



  1. 猪肉糜加盐,生抽,蚝油,盐,植物油,姜,糖,花椒粉拌匀,冷藏腌制半小时。



  1. 蔬菜加盐拌匀,等待15分钟后蔬菜出水,攥干水分后加入肉馅拌匀即可。



  1. 包好的饺子,饺子皮薄、透、韧、大。

小贴士

1.制作饺子皮可选用谷朊粉;
2.抽真空制作面团的步骤,普通的家用抽真空机也能做到;
3.猪肉馅需要快速搅拌起胶,蔬菜需要加盐杀水再拌入肉馅,口感会更好;
