酥到掉渣的开运酥的做法
- 黄油常温软化到手指戳下去能轻松形成一个凹洞。
- 加入糖粉用硅刀拌匀至完全吸收,加入蛋液后用打蛋器搅打至顺滑,不要过度打发。
- 加入盐、奶粉、低筋面粉、先用硅刀切拌至无干粉,然后戴上手套揉均匀。
- 将面团平均分成2份,其中一份加入红丝绒液后揉匀,然后分别包上保鲜膜,室温松弛30分钟,如果室温高就放冷藏。
- 松弛间隙准备馅料。将豆沙馅分成21克一份,麻薯分成4克一份。然后将麻薯包入豆沙中搓圆备用。
- 松弛好的饼皮,各自分成20克一份,每份再折叠揉捏几下后,将面团压扁摊开,包入馅料用虎口收口捏紧搓圆。
