蓝莓包 网红爆火的面包的做法
- 先做蛋糕体部分,蛋清蛋黄分离,烤箱提前预热155度,20分钟
- 玉米油和牛奶搅拌到没有油花
- 筛入低筋面粉,翻拌均匀
- 倒入蛋黄拌匀
- 蛋清中加柠檬汁,打蛋器高速打发
- 大泡泡时第一次加糖
- 小泡泡时第二次加糖
- 打到有明显纹路的第三次加糖
- 打到小尖尖状,蛋清倒扣不会掉落
- 取三分之一蛋白放入蛋黄糊中,翻拌均匀
- 倒入剩下的蛋白中,拌匀
- 倒入模具中,表面刮平震两下,放入烤箱中,155度50分钟左右,每个烤箱温度不一样,根据自己烤箱温度而定
- 出炉后再震两下,倒扣晾凉
- 脱模后平均切4份
- 面包体部分,除了黄油外,所有材料放厨师机,揉成面团
- 揉出粗膜后放黄油,黄油要提前软化
- 揉出手套膜
- 发酵2倍大
- 按压排气分2份,盖保鲜膜松弛10分钟
- 再擀成圆形,放入模具中,二次发酵
- 发酵好后表面刷蛋液,再挤沙拉酱油,烤箱175度25分钟,上色明显后盖锡纸,不要把表面烤焦
- 出炉后晾凉
- 每个面包平均切3份
