扬州的名菜,狮子头,可是我不爱吃那种一夹就烂一直闷在汤里的所谓名菜,这个沾肉,我们扬州人基本上家家都会做,更具有扬州家常菜的代表性,一般选择五花肉肥瘦相间的做出来比较可口,今天我做的是选用猪前夹肉

肉丸(沾肉)(狮子头)的做法

  1. 这是小时候的味道,也是味道的传承,手工剁,现在的机器加工出来的肉泥吃在嘴里缺少一些口感,到嘴就碎碎的一点纤维感都找不到,要牙齿干啥用呢
    先切小块,再剁成肉泥,剁的时候葱姜也切成小小的一起剁



  1. 剁好的肉泥加入一颗或者两颗蛋,整个肉丸不加水,如果想要弹性十足的肉丸并且炸的时候比较容易定型的就一斤左右猪肉加一颗蛋,想要口感嫩的加两颗蛋



  1. 耗油可加可不加,加入料酒,盐,生抽,老抽,糖(其实我小时候也就是盐糖三和四美黄豆酱油)



  1. 这一步搅拌,顺一个方向,不仅要充分搅拌均匀,还得搅最少十几二十分钟,这个动作会让肉变的特别有弹性,不吹牛的掉地上都不会裂开



  1. 最熟悉的香味就是菜籽油炸的肉丸子,锅内加入300克菜籽油,手上也抹点,直接上手操作,我的1斤2两肉做了10个,之前一般都12个,一两一个,今天想让他们多吃点,就做大点了
    油温升高以后改小火,取50克样子的肉泥,双手来回在掌心摔打,这一步让肉丸表面光滑肉之间没有空隙,炸成焦黄色就可以了
